Welcome to Enclave Sourdough! My name is Dane Switzer and I started experimenting with naturally leavened bread in 2020. After a year or so of immense failure, I finally began to have some success. I learned to appreciate the highs and lows of sourdough baking; the myriad wins, the seemingly devastating losses. Through these failures and triumphs I fell in love with studying the science and artistry behind wild yeast cultivation & artisan baking. This is a craft with bottomless depth, and I believe to be a sourdough baker is to be a student in perpetuity. I love to share food and my passion for bread, and I aim to help educate others on the importance of whole grains and knowing where our food comes from.
